Based on a 300-year-old recipe, Corwall-born master chef Philip Harper has created the typical sake of the Edo period, which was full-bodied, rustic, and caramelizes itself into a mature umami bomb.

It is recommended for foie gras, duck, and dark chocolate-hazelnut desserts, and harmonizes well with raspberries.
